Fish is quick to cook, light, and works with almost any spice or cooking method. This guide collects every fish recipe on The Recipe World and explains how to choose the right fish and the right method, so you can cook it well the first time.
Choose the Right Cooking Method
- Pan-frying: best for thin to medium fillets. A hot pan and a dry surface give a golden crust. Try garlic butter pan-fried fish fillets.
- Deep-frying and shallow-frying: for crispy, restaurant-style results. See the Chinese crispy fish fillet and the spicy Indian fish fry.
- Air frying: crunchy with much less oil. Start with crispy air fryer fish fillets.
- Baking: the easiest, most hands-off option. Try baked fish Veracruz or Greek baked fish with lemon and oregano.
- Grilling: smoky flavour for whole fish and thick steaks. See Turkish grilled sea bass.
- Blackening: a bold spice crust cooked in a very hot pan. Try Cajun blackened fish.
Which Fish Should You Buy?
Firm white fish such as cod, haddock, tilapia, sea bass and snapper hold their shape well in frying, baking and tacos. Oily fish such as salmon and mackerel suit grilling and baking because their natural fat keeps them moist. For biryani, choose a firm fish that will not fall apart when layered with rice, such as in our fish biryani recipe.
How to Tell When Fish Is Cooked
Fish is done when the flesh turns opaque and flakes easily with a fork. Food safety guidance from the USDA is an internal temperature of 145°F (63°C). Fish keeps cooking from residual heat, so take it off the heat just as it flakes.
