Jamaican Jerk Chicken Stir-Fry is a flavourful dish that combines the spicy, aromatic flavours of jerk seasoning with the quick cooking technique of stir-frying. Here’s a recipe you can try:

Ingredients:

  • Chicken:
    • 2 chicken breasts, thinly sliced
    • 1 tablespoon jerk seasoning (adjust based on spice preference)
    • 1 tablespoon soy sauce
    • 2 tablespoons vegetable oil
  • Vegetables:
    • 1 bell pepper (any colour), julienned
    • 1 medium onion, sliced
    • 1 carrot, julienned
    • 1/2 cup snap peas
  • Sauce:
    • 1 tablespoon soy sauce
    • 2 tablespoons orange juice
    • 1 tablespoon honey
    • 1 teaspoon fresh ginger, grated
    • 2 cloves garlic, minced
    • Salt and pepper to taste
  • For serving:
    • Cooked rice or noodles
    • Fresh cilantro, chopped (optional)
    • Lime wedges (optional)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the sliced chicken with jerk seasoning and 1 tablespoon of soy sauce. Let it marinate for at least 15 minutes, or up to an hour if time permits.
  2. Prepare the Sauce:
    • In a small bowl, mix together the soy sauce, orange juice, honey, ginger, and garlic. Set aside.
  3. Cook the Chicken:
    • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until it is cooked through and nicely browned. Remove the chicken from the pan and set aside.
  4. Stir-Fry the Vegetables:
    • In the same pan, add the remaining oil. Add the onions and carrots, stir-frying for about 2 minutes. Then add the bell pepper and snap peas. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. Combine and Simmer:
    • Return the chicken to the pan with the vegetables. Pour the prepared sauce over everything. Stir well to combine and allow the sauce to heat through and thicken slightly, about 2-3 minutes.
  6. Serve:
    • Serve the stir-fry over cooked rice or noodles. Garnish with chopped cilantro and lime wedges if desired.
