Ingredients:

Instructions:

  3. Cream Butter and Sugar: In another bowl, beat the butter and sugar until light and fluffy.
  4. Add Eggs and Vanilla: Mix in the eggs one at a time, followed by the vanilla extract.
  5. Combine Wet and Dry Ingredients: Alternately add the flour mixture and milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Bake: Fill cupcake liners 2/3 full and bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool completely before frosting.

Preparing the Meringue Frosting:

  1. Heat the Egg Whites: In a heatproof bowl over a double boiler, whisk together egg whites, sugar, and cream of tartar until sugar dissolves.
  2. Whip to Stiff Peaks: Remove from heat and use an electric mixer to beat until glossy, stiff peaks form.
  3. Add Vanilla: Mix in the vanilla extract.
  4. Decorate: Pipe or spread the meringue onto cooled cupcakes and lightly toast with a kitchen torch for a golden finish.
