  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup buttermilk
  • Food colouring (red, orange, yellow, green, blue, purple)

For the Frosting:

  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract

Step-by-Step Instructions

Preparing the Cake Batter:

  1. Preheat your oven to 350°F (175°C). Grease and line six 8-inch cake pans with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Cream butter and sugar in a separate bowl until light and fluffy. Add eggs one at a time, followed by vanilla extract.
  4. Gradually mix the dry ingredients into the wet ingredients, alternating with buttermilk.
  5. Divide the batter evenly into six bowls. Add a few drops of food colouring to each bowl to create vibrant rainbow colours.
  6. Pour each coloured batter into its respective cake pan and bake for 15-20 minutes or until a toothpick inserted into the centre comes out clean.

Assembling the Rainbow Cake:

  1. Let the layers cool completely before assembly.
  2. Prepare the frosting by beating butter, powdered sugar, heavy cream, and vanilla extract until smooth.
  3. Stack the layers in rainbow order, spreading a thin layer of frosting between each layer.
  4. Frost the outside of the cake and smooth it out for a clean finish. Decorate as desired.
