Ingredients for Hazelnut Cake

For the Cake:

  • 200g ground hazelnuts
  • 150g all-purpose flour
  • 150g granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs (room temperature)
  • 120ml whole milk
  • 120ml vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract

For the Frosting (Optional):

  • 200g unsalted butter (softened)
  • 400g powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp hazelnut extract
  • Chopped hazelnuts for garnish

Steps to Make Hazelnut Cake

1. Prepare the Cake Batter:

  1. Preheat your oven to 175°C (350°F). Grease and line two 8-inch round cake pans.
  2. In a large mixing bowl, whisk together ground hazelnuts, flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, then mix in the milk, vegetable oil, vanilla extract, and almond extract.
  4. Gradually fold the wet ingredients into the dry ingredients until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick inserted into the centre comes out clean.
  7. Let the cakes cool completely before frosting.

2. Prepare the Frosting (Optional):

  1. Beat the softened butter in a large bowl until creamy.
  2. Gradually add powdered sugar, mixing well after each addition.
  3. Stir in heavy cream and hazelnut extract, whipping until light and fluffy.

3. Assemble the Cake:

  1. Place one cake layer on a serving plate and spread a generous amount of frosting on top.
  2. Add the second cake layer and frost the top and sides of the cake.
  3. Decorate with chopped hazelnuts for a delicious and crunchy garnish.
