Ingredients for Pecan Praline Cake

For the Cake:

  • 200g all-purpose flour
  • 150g granulated sugar
  • 100g brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 120ml buttermilk
  • 120ml vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans

For the Praline Frosting:

  • 100g unsalted butter
  • 200g brown sugar
  • 120ml heavy cream
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (sifted)
  • 1/2 cup chopped pecans (toasted)

Steps to Make Pecan Praline Cake

1. Prepare the Cake Batter:

  1. Preheat your oven to 175°C (350°F). Grease and line two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, then mix in the buttermilk, vegetable oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the chopped pecans.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick inserted into the centre comes out clean.
  8. Let the cakes cool completely before frosting.

2. Prepare the Praline Frosting:

  1. In a saucepan, melt the butter over medium heat.
  2. Stir in the brown sugar and heavy cream, bringing the mixture to a boil. Boil for 1-2 minutes, then remove from heat.
  3. Stir in vanilla extract and let the mixture cool slightly.
  4. Gradually whisk in powdered sugar until smooth and creamy.
  5. Fold in toasted pecans.

3. Assemble the Cake:

  1. Place one cake layer on a serving plate and spread a generous amount of praline frosting on top.
  2. Add the second cake layer and frost the top and sides of the cake.
  3. Decorate with additional toasted pecans if desired.
