Ingredients for Boston Cream Pie

For the Sponge Cake:

  • 4 large eggs (room temperature)
  • 200g granulated sugar
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 120ml whole milk
  • 60g unsalted butter (melted)
  • 1 tsp vanilla extract

For the Custard Filling:

  • 500ml whole milk
  • 100g granulated sugar
  • 4 large egg yolks
  • 50g corn starch
  • 1 tsp vanilla extract

For the Chocolate Glaze:

  • 200g dark chocolate (chopped)
  • 120ml heavy cream

Steps to Make Boston Cream Pie

1. Prepare the Sponge Cake:

  1. Preheat your oven to 180°C (350°F). Grease and line two 9-inch round cake pans.
  2. In a large bowl, whisk the eggs and granulated sugar until light and fluffy.
  3. Sift together the flour and baking powder, then gradually fold it into the egg mixture.
  4. Heat the milk and melted butter until warm but not boiling. Stir in vanilla extract.
  5. Gradually fold the milk mixture into the batter until smooth.
  6. Divide the batter evenly between the prepared pans and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow the cakes to cool completely before assembling.

2. Make the Custard Filling:

  1. In a medium saucepan, heat the milk over medium heat until it just starts to simmer.
  2. In a separate bowl, whisk together sugar, egg yolks, and cornstarch until smooth.
  3. Gradually pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened.
  5. Remove from heat and stir in vanilla extract. Cover with plastic wrap to prevent a skin from forming and let it cool.

3. Prepare the Chocolate Glaze:

  1. Heat the heavy cream in a saucepan until it just starts to boil.
  2. Pour the hot cream over the chopped dark chocolate and stir until smooth. Let it cool slightly.

4. Assemble the Cake:

  1. Place one sponge cake layer on a serving plate.
  2. Spread the cooled custard filling evenly over the top.
  3. Place the second sponge cake layer on top.
  4. Pour the chocolate glaze over the cake, letting it drip down the sides for a glossy finish.
  5. Chill the cake in the refrigerator for at least 1 hour before serving.
