Homemade Teriyaki Sauce Recipe: Sweet, Savoury & Better Than Store-Bought

When it comes to flavour-packed sauces, few can compete with the rich, sweet, and umami goodness of Teriyaki Sauce. Originating from Japanese cuisine, this versatile sauce has become a global favourite, enhancing everything from chicken and tofu to noodles and grilled vegetables.

What Is Teriyaki Sauce?

Teriyaki Sauce is a traditional Japanese glaze made by simmering soy sauce, mirin (or rice wine), sugar, and ginger. The word “teriyaki” refers to a cooking technique—teri (glossy shine) + yaki (grilling or broiling). The result is a shiny, flavorful coating for meats, seafood, tofu, and veggies.

In modern cooking, teriyaki sauce is used as a marinade, stir-fry sauce, or finishing glaze—making it one of the most versatile condiments in your kitchen.

Ingredients for Teriyaki Sauce

Here’s what you’ll need to make authentic teriyaki sauce at home:

Base Ingredients:

  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup water
  • 1/4 cup brown sugar (or honey/maple syrup)
  • 2 tablespoons mirin or rice vinegar
  • 1 tablespoon corn starch + 2 tbsp water (slurry for thickening)
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger
  • Optional: 1 teaspoon sesame oil for added depth

How to Make Teriyaki Sauce

Step 1: Combine Ingredients

In a small saucepan, mix together soy sauce, water, sugar, mirin, garlic, and ginger. Stir to combine.

Step 2: Simmer and Stir

Bring the mixture to a gentle boil over medium heat, stirring occasionally until the sugar dissolves and the sauce starts to reduce.

Step 3: Thicken with Corn starch Slurry

Mix 1 tbsp corn starch with 2 tbsp water to create a slurry. Slowly pour it into the saucepan while whisking. Let the sauce simmer for 2–3 minutes until thickened.

Step 4: Finish and Cool

Remove from heat. Let it cool before transferring to a glass jar. The sauce will thicken slightly as it cools.

Teriyaki Sauce is a must-have for home cooks who love bold, umami-packed flavours. With just a few pantry staples, you can whip up a homemade version that’s healthier, tastier, and more versatile than any store-bought bottle. It works for all kinds of diets, from vegan to gluten-free, and elevates everything from stir-fries to sandwiches.
